「pancreas」は古代ギリシャ語の「pankreas」に由来し、'pan-'は「すべて／全て」を、'kreas'は「肉・肉片（肉）」を意味した。
ギリシャ語の「pankreas」がラテン語の「pancreas」に取り入れられ、医学ラテン語を経て中英語・近代英語に入った。語形は比較的一貫している。
当初は「全ての肉（肉のようなもの）」を指す語だったが、次第に消化酵素とホルモンを分泌する特定の腺（すい臓）を意味するようになった。
