語源
「noncarbohydrate」は接頭辞「non-」（ラテン語の「non」、「〜でない」を意味）と化学用語「carbohydrate（炭水化物）」が結合してできている。
「carbohydrate」はもともと「carbon（炭素）の水和物」を表す表現（フランス語の「hydrate de carbone」やドイツ語の「Kohlenhydrate」）から19世紀に現在の語形に発展した。そこに否定の接頭辞「non-」が付いて「非炭水化物」を表す語が作られた。
当初「carbohydrate」は「炭素の水和物」という記述的な意味だったが、次第に糖やでんぷんなどの標準的な呼称になった。したがって「noncarbohydrate」は「その分類に属さないもの」を意味するようになった。
